There are quite a few resources on the net that touch on selecting a mail transfer agent and a POP/IMAP server, e.g. http://shearer.org/MTA_Comparison and http://en.wikipedia.org/wiki/Comparison_of_mail_servers

Personally, for an MTA I like Exim http://www.exim.org/ a lot - it is very flexible, has a readable configuration format and an adequate track record for security.

My preference for a POP/IMAP server is somewhat less pronounced. Dovecot seems to do a good job of it, and is quite straightforward configuration-wise. By Ray Dassen, Senior Technical Account Manager at Red Hat
